Barber’s Cave Aged Cheddar 

Since 1833, the Barber family has been crafting cheddar on their family farm in Somerset, making them the world’s oldest surviving cheddar-makers. Here is their story… 

For over 190 years, the Barber family has been perfecting the art of cheddar-making on their Somerset farm, earning the title of the world’s oldest surviving cheddar-makers. Their commitment to quality begins with exceptional milk, sourced from the lush pastures of Somerset and Dorset. Barber’s Cave Aged Cheddar is the result of a meticulous process, including the use of rare, traditional cheese starter cultures, ensuring a rich, full-flavored cheddar that captures the essence of West Country cheesemaking. This cheddar isn’t just made; it’s crafted with generations of expertise, offering a taste of history in every bite. 

 

Gillot Camembert PDO  

Since 1912, Gillot has been a proud producer of authentic Camembert de Normandie, preserving a centuries-old recipe while adapting to meet modern tastes…   

Using raw milk from the region’s lush pastures, this Camembert is hand-moulded with five delicate ladle strokes, a process that ensures its authenticity and exceptional quality. The milk comes from Normande cows that graze on GMO-free pastures, producing rich, creamy milk that is transformed into a cheese revered worldwide. With its velvety texture and complex, rich flavour, Gillot Camembert PDO blends traditional craftsmanship with a modern appreciation for fine cheese. 

 

Colston Bassett Stilton PDO 

Colston Bassett Dairy has been crafting exceptional Stilton in the Vale of Belvoir since 1913 combining generations of knowledge with a commitment to traditional methods.  

Sourcing milk from local farms within 1.5 miles of the dairy, their Stilton is renowned for its consistency and depth of flavour. Winner of multiple Great Taste Awards and protected by PDO status, Colston Bassett Stilton is a world-class cheese that embodies the best of British cheesemaking.   

 

Vacherin Mont-d’Or AOP 

Since earning its AOP (Protected Designation of Origin) status in 2003, Vacherin Mont-d’Or has been crafted according to precise, time-honoured specifications.  

Vacherin Mont-d’Or AOP is a seasonal delicacy crafted only from August to March when the cows descend from their summer pastures. Produced by just 11 cheesemakers in the Jura, this cheese is a labour of love, wrapped in fragrant spruce bark and aged to perfection. The result is a rich, velvety texture with a unique, resinous flavour. Vacherin Mont-d’Or AOP’s unmistakable qualities make it a true indulgence, offering a taste of the Jura’s ancient cheesemaking traditions.
